Ahmedabad, May 11, 2026: ITC Narmada, a luxury collection hotel in Ahmedabad, introduces Arusuvai Vrindhu, an elaborate South Indian thali, on May 11 at its signature Sattvic-certified restaurant, Royal Vega. Already a well-received offering by the discerning patrons at ITC Grand Chola in Chennai, the repertoire of preparations is now available in Ahmedabad as a permanent addition to Royal Vega’s curated menu.
The thali is being offered for lunch and dinner at Royal Vega,
which is celebrated by patrons for its much-acclaimed Karnavati Khasa and
Ranjit Khasa.
Curated on
the basis of the principles of Arusuvai , meaning —
the harmonious balance of six tastes — the thali takes you through a
gastronomic voyage that not just brings forth the region’s flavours but also
focuses on seasonal ingredients and traditional cooking techniques. The menu
and its preparations reflect purity, natural flavours, and mindful preparation,
celebrating the depth of Indian vegetarian cuisine.
The specially
curated menu in the ITC Kitchen begins the experience with traditional
accompaniments such as Appalam, Gongura Pickle, and a selection of chutneys,
followed by refreshing beverages like Neer More (spiced buttermilk) and
Jeeragam Rasam. The thali then unfolds into a diverse spread of dishes
including Senkizhangu Pachadi, Pazha Dosai, and Kuzhi Paniyaram, alongside a
variety of vegetable preparations such as Pachhai Kai Kari Korma, Vendakkai
Poriyal, Pusinikai Moru Kulambu, and Urulai Kara Kari.
Signature
rice preparations like Paruppu Podi Sadam, Ponni Sadam, and Thayir Sadam are
complemented by breads such as Idiyappam and Poori, offering both texture and
variety. The meal concludes with traditional desserts including Sevian Javarsi
Payasam And Badam Halwa, followed by classic filter coffee.
